Welcome back to another lactose free recipe. Today’s delicious recipe continuous the best part of the year, spooky season. This recipe takes the classic and adorable unicorn and gives it an evil devilish twist.

  • Preheat your oven to 180°C and line a muffin pan with cupcake liners.
  • Place the margarine and sugar in a bowl.
  • Beat until light and fluffy.
  • Add the eggs and vanilla. Beat well. In a separate bowl sift the cocoa and flour. Sift this mixture into the bowl with the margarine.
  • Add the milk and mix until smooth.
  • Spoon the mix into the prepared muffin pan. Try to fill them halfway.
  • Bake for 12 to 16 minutes. Test the cupcakes by inserting a skewer into the centre. If it comes out clean, then the cupcake has finished cooking.
  • Let the cupcakes sit in the hot pan for a few minutes then transfer onto a wire rack to cool. The longer the cupcakes are sitting in the hot pan the more they will cook. So it is better not to leave them in for too long.
  • The cupcakes need to be cooled completely before we can move onto icing them. You can prepare the cupcakes ahead of time and store them in the fridge.
  • Decorating
  • The first step is to prepare the horns. Grab the mould and place a small amount of the red fondant into the mould. Press down.
  • Use your fingers to clean up the edges.
  • Invert the mould and gently release the horn.
  • Place the horn to the side to be used later.
  • Starting on the ears next. Roll some red fondant out flat. I prefer to roll it out in between two pieces of baking paper to prevent any sticking. Grab the small leaf cutter. Gently cut out several pieces.
  • Roll some black fondant out flat. Grab the large cutter. Gently cut out several pieces.
  • Press the red earpieces onto the black earpieces. Use a knife to make a small cut in the centre.
  • Gently pinch the bottom of ears together. Set aside.
  • Dye some of the icing black. Fit the piping bag with the tip. Spoon the icing into the bag.
  • Grab a cooled cupcake. Pipe a classic cupcake swirl onto the cupcake.
  • Place a horn into the centre.
  • Place two little ears next to the horn.
  • Congratulations you have now made little evil unicorn cupcakes.
