Burger Cupcakes & Cookie Fries (Lactose free!)

Welcome back to another delicious lactose free recipe. This recipe is a little bit complicated and fiddly. There are a fair number of parts to be prepared to make these little burger cupcakes and cookie fries. The result is very visually striking and well worth the effort.

 

The recipes on this website have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

 

The brownie recipe comes from the World of Warcraft cooking book just tweaked a slight bit. It is a fantastic book if you are a lover of WoW, I highly recommend it. This recipe works well with lactose free products. I have never made a bad batch of brownies with this recipe.

    Burger Buns (Vanilla Cupcakes)
  • Preheat your oven to 180°c . Grease a 12 capacity cupcake pan. Don’t line with cases.
  • In a bowl combine the flour and sugar.
  • Then add the eggs, margarine, milk and vanilla. Mix well.
  • Keep mixing until the mixture is free from lumps.
  • Spoon the mix into the cupcake pan. To achieve more even cupcakes, I like to use a ¼ measuring cup.
  • Bake the cupcakes for 10 minutes. Test the cupcakes by inserting a skewer into the centre. If it comes out clean, then the cupcake has finished cooking.
  • Transfer onto a wire rack to cool.
  • Slice the top of the cupcakes so it leaves a flat surface. Turn the cupcake upside down onto a tray. These will be the burger buns.
  • Get your honey or maple syrup and put a small dot into the centre of the bun. Brush it over the cupcake. Get the sesame seeds and sprinkle them on top of the cupcake.
  • Meat Patty (Chocolate Brownie)
  • Preheat your oven to 180 degrees. Grease a square brownie pan.
  • Add the margarine and cocoa powder to a medium saucepan and melt.
  • Remove the saucepan from the heat and add the sugar, eggs and vanilla. Mix until smooth.
  • Add the flour, salt and baking powder and stir until smooth.
  • Pour into the prepared pan. Tap the tin a few times on the bench so it eliminates any air bubbles. You can see an air bubble in one of the following picture where I didn’t tap the tin enough.
  • Bake for 20 to 30 minutes.
  • When the brownies have cooled down run a knife around the edge and turn out onto a large tray. (You can see the air bubbles at the bottom)
  • The next step is to cut out brownies with a circle cookie cutter that is slightly smaller than the size of the cupcakes.
  • Place the circles back onto the tray. Keep the left-over bits as a snack for later.
  • The circles should be 1 to 1.5 cm thick.
  • Cookie Fries
  • Beat the margarine and sugar in a large bowl until creamy. Add the egg and vanilla extract. Also add in a small amount of the yellow food colouring. Mix until all ingredients are well incorporated.
  • In a separate bowl mix the flour, baking powder and salt.
  • Slowly add the flour mix into the margarine mixture until it forms a soft dough.
  • Shape the dough into a ball and chill in the fridge for an hour. (You can keep it the fridge overnight and even freeze the dough to be used later)
  • When the dough has been chilled preheat the oven to 170c (350f). Line a tray with baking paper.
  • Roll the dough out on a lightly floured surface. Cut the edges so it forms a perfect rectangle.
  • Cut the dough into smaller rectangles.
  • Transfer the cookies onto the tray and bake for 8 – 12 minutes until the cookie are just starting to brown.
  • Cool the cookies completely and serve with the burgers.
  • Burger Toppings
  • Now we need to prepare the last three things needed for the burger.
  • To prepare the cheese colour some fondant yellow, add a small amount of orange and knead well.
  • Roll out the fondant.
  • Cut into small squares.
  • Colour some vanilla icing bright red and place into a large piping bag fitted with a circle tip.
  • Place some flaked coconut into a bowl.
  • Add in some green food colouring and water to cover the coconut. Stir well.
  • Drain and place onto a paper towel and pat dry.
  • Assembly
  • Get the bottom part of the bun and place a small amount of the coconut lettuce on top.
  • Place the brownie on top of the lettuce.
  • Place a piece of the fondant cheese on top of the brownie. Press down slightly on the side so it overhangs a little bit.
  • Pipe the icing on top of the fondant.
  • Place a burger bun with seeds on top of the icing.
  • Repeat until you have made all the burgers.
  • Congratulations you have made burger cupcakes with cookie fries.
  • Serve, devour and enjoy.
