Slime Monster Cupcakes

Welcome everyone to another delicious lactose free recipe.  This post features a cute but slimy little monster that is surprisingly easy to make..

I should mention that the slime used in this series comes from the brand Over The Top. It is an edible slime that comes in three beautiful colours. I will be using these to create many creations, not because I am sponsored (I wish) but because the slime looks so amazing.

You can use whichever icing you want. I always use Over The Top because it is dairy free and top quality.

If you do not have eyeball sprinkles you can make your own out of fondant. Get a piece of white fondant and roll it into several balls. Squash it flat. Get another piece of fondant and color it black. Roll it into small black balls and squash them flat. Apply a small amount of water to the back of the black ball and press it down into the center of the white ball. This will make a lovely eyeball. The recipe you see is entirely lactose free, providing you use the right products of course. Check the fondant you will be using to make sure it contains no lactose. I prefer to use ‘Satin Ice Gum Paste’.

  • Preheat your oven to 180c (356°F). Grease a 12 capacity cupcake pan and line with cases. Green cases are preferable so they match the slime and icing.
  • In a bowl combine the flour and sugar.
  • Then add the eggs, margarine, milk and vanilla and mix. Keep mixing until the mixture is free from lumps.
  • Spoon the mix into the cases. To achieve more even cupcakes, I like to use a ¼ measuring cup.
  • Bake the cupcakes for 10 minutes. Test the cupcakes by inserting a skewer into the center. If it comes out clean, then the cupcake has finished cooking.
  • Let the cupcakes sit in the hot pan for a few minutes then transfer onto a wire rack to cool. The longer the cupcakes are sitting in the hot pan the more they will cook. So it is better not to leave them in for too long.
  • The cupcakes need to be cooled completely before we can move onto icing them. You can prepare the cupcakes ahead of time and store them in the fridge.
  • Decorating
  • Prepare your two piping bags by cutting off the end and inserting the grass and circle tips.
  • Place some icing in a bowl. Add some green colouring and mix well.
  • Spoon the icing into the bag with the grass piping tip.
  • Grab your cupcakes and cut a hole in the center. The bigger the hole the more slime you can fit in. That being said the slime itself is very sweet so keep that in mind.
  • Open up your container of edible slime and give it a quick stir.
  • Get your second piping bag with the round piping tip. Fill it with slime.
  • Get your prepared cupcake and pipe some slime into the hole filling it up to the top.
  • Get the piping bag with the icing and cover the entire top of the cupcake. Squeeze and drag the strands over the top of the cupcake moving in different directions. Don’t worry about being too precise, the cupcakes look better if they are a little bit messy.
  • Get your two eyeball sprinkles and place them on top. Gently press into the icing to secure them in place.
  • Serve, devour and enjoy.
