Rainbow Whoopie Pie (Lactose Free!)

Welcome back to another lactose free recipe. For this week’s recipe I wanted to make something that is delicious, colorful and easy to make. I present these adorable chocolate whoopie pies, filled with vanilla buttercream and dipped in sprinkles these pillows of perfection are so easy to make.

  • Preheat your oven to 180 °C (350f) and line a large baking tray with baking paper.
  • In a medium bowl sift the flour, cocoa powder, baking soda and salt. Stir well.
  • In a large bowl cream the margarine and sugar.
  • Add in the egg and vanilla. Beat well.
  • Beat in the milk. It may look split but it will come together when we add in the flour mix.
  • Add in the flour mix a little bit at a time. The mix should be lovely and thick.
  • Grab your 1/2 tsp Spoon. Scoop out a heaped spoon of the batter and place onto the tray. If the scoop isn't quite round and even you can use your finger to even it out. Make sure you leave a decent sized gap in between them as they will spread and rise quite a bit.
  • Bake 9 to 12 minutes. Until you can insert a toothpick into the centre and it comes out clean.
  • Transfer to a wire rack to cool down. Keep baking batches until you have used up all the batter.
  • When the whoopie pies have cooled down you can move onto decorating them.
  • Fit a piping bag with the round piping tip. Fill it up with icing. Fill a small bowl with the sprinkles and grab a spoon.
  • Flip half of the whoopie pies over. Pipe a generous amount of icing around the edge of the pies.
  • Grab the spoon and fill the centre up with sprinkles. You can always fill the centre up with icing if you don't want to have a sprinkle centre.
  • Place a whoopie pie on top.
  • Gently hold the pie and dip it into the sprinkles so the icing around the edges is getting coated. Roll it around the sprinkles so the icing is coated the whole way around.
  • Gently remove the excess sprinkles that may have gotten on the top or bottom.
  • Keep icing and decorating them until they are all done.
  • Congratulations you have just made rainbow sprinkle whoopie pies.
  • Serve, devour and enjoy.
