Welcome back to another delicious lactose free recipe. For this week’s recipe I wanted to make a delicious bread. I present this delicious Pampushky recipe. A fluffy Ukrainian garlic bread that is perfect to serve alongside soup, in particularly Borscht.

 

The recipes here have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

  • The first step is to prepare a starter that needs to sit and proof in your refrigerator overnight.
  • In a large bowl add the yeast, sugar and the warm water.
  • Add in 1 & ¼ cups of bread flour and mix.
  • Cover with clingwrap and place in the fridge overnight.
  • The next day, take the bowl out of the fridge. It should have doubled in size and become bubbly.
  • Add in the rest of the flour (1 & ¼ cups) and the sea salt. Mix until a rough dough forms.
  • Tip the dough out onto a lightly floured work surface and knead until smooth.
  • The next step requires either a cake pan or a pie tin to proof and bake the rolls in. I choose to use an oven safe pie dish.
  • Weight your dough and divide into eight even pieces. Shape the pieces of dough into little balls.
  • Grease your cake pan or pie dish. Arrange the dough balls in the baking dish so they have enough room to expand.
  • Loosely cover the buns with clingwrap. Leave the bread in a warm draught free place to proof for one to two hours until they have doubled in size.
  • While the bread is rising in a small bowl add the oil, garlic, herbs and a pinch of salt. Leave to infuse while the bread is rising.
  • When the bread has doubled it is onto the next part, cooking. Preheat your oven to 220°C.
  • In a small bowl add the egg and a tablespoon of water. Mix well.
  • Generously brush the rolls with beaten egg.
  • Bake for 20 to 30 minutes until the rolls are beautiful and golden.
  • Brush them with the garlic herb oil. If you love garlic I suggest be generous, if not then I suggest a light covering.
  • Sprinkle the rest of the fresh herbs onto the rolls.
  • Congratulations you have just made beautiful and delicious Pampushky rolls.
  • Serve, devour and enjoy.
