Welcome back to another lactose free recipe. This week I wanted to share with you a recipe that is a little bit spooky and creepy. These cookies are easy to make. A great recipe to make with kids for any occasion.

As always, I have tested this recipe many times and found it to be successful providing you keep to the recipe. Plus, it works amazing with lactose free products. This recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

  • Preheat your oven to 180 °C (350 °F). Line three trays with baking paper.
  • Place the margarine and sugar in a large bowl.
  • Beat the margarine and sugar together until light and creamy.
  • Add the yolk and eggs to the butter mixture and mix. Mix in the vanilla and the salt.
  • In a separate bowl mix the flour, baking powder and cream of tartar.
  • Slowly add the flour mixture to the butter mixture while stirring.
  • Stir until the dough is well combined.
  • Shape the dough into a ball and cover with cling-wrap. Chill the dough in the fridge for at least 30 minutes.
  • Divide the dough into four even sections. Place each section into a small bowl.
  • Add a small amount of food colouring to each of the bowls. Stir well to ensure the colouring is mixed in.
  • Grab a tablespoon of dough and roll into a ball. Place the balls on a tray leaving a decent gap for the dough to flatten out during baking. Do not flatten.
  • If there is any leftover dough feel free to combine them to make a rainbow effect.
  • Bake the cookies a tray at a time for 10 to 13 minutes.
  • As soon as the cookies come out of the oven gently press a few eyeballs into the cookies. Do not worry if a few cracks appear.
  • Move the cookies onto a cooling rack.
  • Serve and enjoy.
