German Fruit Flan – Obstboden (Lactose Free!)

Welcome back to another delicious lactose free recipe. In this recipe I pay homage to my German roots by making a delicious German cake that my Oma actually used to make.

 

This fruit flan is made in a Obstboden tin which creates the iconic cake lip that helps the toppings to stay put. You can fill the inside of the cake with custard, jam or whipped cream. I personally prefer to use a ready made custard, because it is quick, easy and gives the cake some moistness. For the decorations you can pick any fruits you wish to place on top. Fresh berries are always popular. A clear cake glaze called a tortenguss is brushed on top of the cake to create the most beautiful shine and finish.

 

The recipes here have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

 

Always remember that if you fail it is a learning experience and not the end of the world. Baking is something that takes practice. Failures give you an opportunity to look at what went wrong and why. That knowledge and experience is so important for any baker regardless of skill level. Everyone starts somewhere.

  • Preheat your oven to 180c and spray your cake tin with cooking spray.
  • In a large bowl cream together the sugar and margarine.
  • Add in the vanilla sugar, milk and eggs. Mix well.
  • Mix in the flour and baking powder
  • Spoon the mixture into the cake tin and smooth down.
  • Bake for 16 to 20 minutes until golden brown.
  • Flip the cake onto a cooling rack and leave to cool down.
  • Decorating
  • Transfer the cake onto a large plate.
  • Spoon some of the custard on top of the cake, Smooth down. It should be a light covering but not enough to fill up the centre.
  • Start adding your fruits from the outside working your way inwards. Place the cake in the fridge whilst you make the cake glaze.
  • Clear Cake Glaze (Torteguss)
  • Place the water, lemon juice and sugar in a small saucepan.
  • Place the potato starch into a small bowl. Add in a tablespoon (or two) of the water from the saucepan and mix. It should be a runny mixture.
  • Bring the water mixture to a boil and turn down the heat.
  • Add in the potato starch whilst whisking continuously.
  • Keep mixing whilst placed on a low heat. You don't want the mixture to be boiling.
  • You will notice that it will start to thicken and become clear. It will be a little bit runny but still thick.
  • Cool down slightly just so you don't burn yourself if it spills.
  • Brush the glaze all over the top of the fruit.
  • Carefully spoon the rest of the glaze onto the cake. Focus on any gaps in between the fruit.
  • Congratulations you have just made delicious German fruit cake.
  • Serve, devour and enjoy.
