Christmas Spritz Cookies (Lactose Free!)

Welcome back to another delicious lactose free recipe. This week’s recipe continues the Christmas theme. This recipe is for gorgeous little pressed sugar cookies, decorated to look like wreaths, hearts, and Christmas trees.

 

These cookies are made with a cookie press using specific discs.

I did have an issue with the top left disc. As you can see it is off centre, this means that when the cookie is being pressed the edge of the cookie hits the edge of the cookie press. This creates an edge that should not be there. Those cookies looked a little off however they still tasted delicious.

 

 

 

They cookies vanilla flavoured however you may use whatever flavouring you wish.

    Dough
  • Preheat your oven to 180°C and grab several baking trays. You will not need to line them with baking paper. Only use silicon baking mats or press the cookies directly onto the baking tray.
  • In a large bowl add the margarine and sugar.
  • Beat until the mixture becomed creamy and light in colour.
  • Add the eggs and vanilla and mix well.
  • Add the flour and salt. Mix well. The dough will be soft.
  • Divide the dough in thirds and place in separate bowls.
  • Dye one bowl of dough green. Die another bowl of dough red. Leave the other one plain.
  • Place the dough into separate zip lock bags so they do not dry out. We will be working with the plain dough first.
  • Set up the cookie press according to the instructions. Place some dough into the cylinder. Screw one of the wealth designs onto the top section.
  • Squeeze the trigger a few times until you see the dough come out.
  • Hold the cookie press onto the baking tray so it fully touches down.
  • Press down on trigger to press out a cookie. Life the press up. You should see a perfect wreath.
  • Keep pressing out the cookies until you have a full tray. They can be very close together as they will not spread during baking.
  • Bake one tray at a time for 7 minutes.
  • Halfway through the dough switch to a different circle disc. Keep pressing out and baking the cookies until all the dough has been used up.
  • Work on the green dough next. Set the cookie press up so it is fitted with the tree disc. Press out Christmas trees. Bake one tray at a time for 7 minutes. Keep pressing out and baking the cookies until all the dough has been used up.
  • Grab the red dough. Clean out the press so there are no specks of the green dough.
  • Set the cookie press up so it is fitted with the heart disc. Press out little hearts and grab the sprinkles.
  • Sprinkle the top of the hearts with the sprinkles. Bake one tray at a time for 7 minutes. Keep pressing out and baking the cookies until all the dough has been used up.
  • Leave the cookies to cool down.
  • Decorating
  • Now that the cookies have cooled down, we can move onto decorating them.
  • Working with the trees first. In a small bowl add 3 tablespoons of the lactose free buttercream. Add some yellow gel food colouring. Mix well. Spoon the icing into a piping bag fitted with the star piping tip.
  • Gently pipe a star onto the top of part the Christmas trees.
  • Moving onto the wreaths. In two small bowls add several tablespoons of the lactose free buttercream. Add some green gel food colouring to one bowl and red gel food colouring into the other bowl. Mix them well.
  • Spoon the red icing into a piping bag fitted with the small circle piping tip. Spoon the green icing into a piping bag fitted with the small leaf piping tip.
  • Grab the cookies that are rounded. Pipe three little dots onto the centre of one of the sections.
  • Gently pipe two little leaves coming from the red dots.
  • Grab the more pointed cookies. Pipe little dots around the edge.
  • For the heart cookies just gently tap off any excess sprinkles.
  • Congratulations you have decorated all the cookies.
  • Serve, devour, and enjoy.
