Cherry Ripe Slice (Lactose Free)

Welcome back to another lactose free recipe. This week I wanted to share with you something that again is full of chocolate deliciousness.

 

I have tested this recipe many times and found it to be easy and fool proof. Plus, it works amazing with lactose free products. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

  • Preheat your oven to 180 degrees Celsius and line a brownie tin with baking paper.
  • Sift the flour and cocoa powder in a small bowl.
  • Add the sugar and melted margarine. Mix well to combine.
  • Spoon into the brownie pan and flatten.
  • Bake for 10 to 15 minutes until the base feels firm to the touch.
  • Cherry Filling
  • Put the cherries, condensed coconut milk, coconut and a small amount of the pink gel food colouring in another bowl and mix well.
  • Adjust the colouring depending on how pink you want it to be.
  • Spoon the mixture on top of the brownie mixture and smooth down.
  • Bake for 25 to 35 minutes until the edges become golden.
  • Set aside to cool down.
  • Chocolate Topping
  • Prepare a small saucepan of simmering water. Place the copha and chocolate in a different small saucepan. Place the saucepan with the chocolate on top of the first saucepan with the simmering water. Make sure the water isn’t actually touching the second saucepan.
  • Use a metal spoon to constantly stir the chocolate and copha until is it completely melted.
  • Pour the chocolate over the top of the slice and smooth the surface.
  • Leave aside to set at room temperature. You can place it in the fridge to harden completely if you want. However it will be harder to cut, and the chocolate will crack. I learnt that the hard way.
  • Cut into squares. Serve, devour and enjoy.
