Animal Crossing Sugar Cookies (Lactose Free!)

Welcome back to another lactose free recipe. For this week’s recipe I wanted to do something pop culture based. I present these adorable Animal Crossing sugar cookies. Shaped into the leaf item logo these cookies will surprise you with how easy they are to make.

 

The recipes here have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

  • Beat the margarine and sugar in a large bowl until creamy.
  • Add the egg, vanilla extract and a good squirt of the green gel food coloring. Mix until all ingredients are well incorporated.
  • In a separate bowl sift the flour, baking powder and salt.
  • Slowly add the flour mix into the margarine mixture until it forms a soft dough.
  • Shape the dough into a ball and cover with clingwrap. Chill in the fridge for an hour. (You can keep it the fridge overnight and even freeze the dough to be used later)
  • When the dough has been chilled preheat the oven to 170c (350f). Line a tray with baking paper.
  • Lightly flour your work surface and rolling pin. Unwrap the dough and sprinkle some more flour on top.
  • For this design you will need a leaf / petal, circle and triangle cutter.
  • Grab the petal cutter. Cut out as many petal/leaf shapes as you can from the dough.
  • Transfer the cookies onto the baking tray. Make sure to leave a gap in between them.
  • Grab the triangle cutter and cut out small little triangles from the remainder of the dough.
  • Gently grab a small triangle and press it onto the fat end of the leaf.
  • Keep doing this for every leaf.
  • Grab the circle cookie cutter or the piping tip and press into the bottom of the cookie so that it cuts out an almost complete circle but also has the two points.
  • Again do this for all the cookies.
  • Bake the cookies one tray at a time for 8 to 11 minutes until just starting to turn brown on the edges.
  • Transfer the cookies onto a baking tray and leave to cool down.
  • Congratulations you have now made delicious Animal Crossing sugar cookies.
  • Serve, devour and enjoy.
