Welcome back to another delicious lactose free recipe. For this weeks recipe I wanted to do something adorable, rainbow and a little bit strange. I present these adorable unicorn poop meringues.
To achieve the iconic poop shape you will need to keep the piping bag straight. Start by piping a small amount, then in a continuous motion keep piping around that centre. Keep applying pressure and pipe around the edge. Keep piping and bring it up and inwards. Keep piping bringing the swirl into the middle. When you want to stop gradually ease off the pressure and press down slightly and keep dragging the meringue.
I choose to flavour mine with vanilla however you are free to use whatever flavouring you want. They do take a while to cook and dry out but the results are so worth it.

- Preheat your oven to 100°C .
- The bowl that you are whisking the egg whites in must be completely dry and grease free.

- Add the tartaric acid (or cream of tartar) and salt.
- Continue whisking and gradually add the sugar 1 table spoon at a time.

- Add whatever flavouring you wish and mix well.

- Get your baking tray and place a dot of meringue in each corner. Place a sheet of baking paper on top.
- Now you are ready to start piping. Keep the piping bag straight. Start by piping a small amount, then in a continuous motion keep piping around that centre. Keep applying pressure and pipe around the edge. Keep piping and bring it up and inwards. Keep piping bringing the swirl into the middle. When you want to stop gradually ease off the pressure and press down slightly and keep dragging the meringue.
- Repeat until all the meringue had been used up.
- Bake in the oven for one hour & 45 minutes.
- When the time is up turn off the oven. DO NOT OPEN THE OVEN. Leave the door closed and allow the meringue to cool down completely. This will take a few hours. The best way is just to leave them in the oven over night.
- Congratulations you have now made unicorn poop meringues.
