Spinach, Ricotta & Feta Rolls (Lactose Free)

Welcome back to another delicious lactose free recipe. For this weeks recipe I am doing something savory. Crispy puff pastry filled with garlic spinach, creamy ricotta and delicious feta. These little rolls are easy to make and definitely a crowd pleaser.

 

The recipes here have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

 

Always remember that if you fail it is a learning experience and not the end of the world. Baking is something that takes practice. Failures give you an opportunity to look at what went wrong and why. That knowledge and experience is so important for any baker regardless of skill level. Everyone starts somewhere.

 

This recipe makes 20 mini rolls or 5 big rolls.

  • Preheat your oven to 190 C fan forced (370f) and line a baking tray with baking paper.
  • Place the margarine in a saucepan on low to medium heat. When the margarine has melted add in the garlic. Cook for a little bit until fragrant.
  • Add the washed spinach leaves and stir.
  • Cook the spinach until it reduces in size and softens. Turn off the heat and place to the side so it can cool slightly .
  • In a large bowl add the ricotta, shredded cheese and feta. Season with the salt and pepper. Add in the cooked spinach.
  • Stir well until combined.
  • Add the egg and water to a small bowl. Whisk well. Grab the sesame seeds.
  • Place a thawed sheet of puff pastry onto a chopping board.
  • Spoon a good amount of the filling onto the pastry sheet to form a log lengthways.
  • Just below the filling brush a small amount of the egg wash across. Roll the pastry up press down to seal. Cut off the excess pastry. You can use the excess later if you want.
  • Brush the egg wash over the roll. Sprinkle with sesame seeds.
  • Cut each roll into 4 and place onto a baking tray. Make sure to leave room in between them as they will puff up.
  • Continue this process until you have used up all the filling.
  • Bake for 25 to 35 minutes until beautiful and golden. Cooking time will depend on how big the rolls are.
  • Congratulations you have made delicious spinach, ricotta and feta rolls.
