Welcome back to another delicious lactose free recipe. This weeks recipe is delicious rocky road cookies.

 

These cookies are chocolate flavored and filled with marshmallows, peanuts and dark chocolate pieces.

  • Preheat your oven to 180c and line a baking tray with baking paper.
  • Place the margarine and brown sugar and beat until smooth.
  • Add in the egg and vanilla extract and mix well.
  • Add in the cocoa powder, espresso powder, flour, baking powder and salt. Mix until smooth and well combined.
  • Gently mix in the marshmallows, chocolate and peanuts.
  • Use a 1/2 tablespoon sized measuring spoon to scoop out some of the cookie dough. Roll into a ball and place onto the baking tray.
  • Place a few marshmallows on top of the cookie.
  • Try to keep the marshmallows in the middle of the dough. Marshmallows tend to melt. If they are outside the dough it will leak out and create a rough edge.
  • Bake the cookies for 10 minutes. Try not to overbake too much. A gooey cookie is a delicious cookie.
  • Move the cookies to a cooling rack to cool down.
  • Time to decorate! Melt some chocolate and spoon into a piping bag.
  • Cut the end of the bag and gently drizzle the chocolate over the top of the cookies. Sprinkle the top of the cookies with the extra peanuts. Leave the chocolate to set.
