Good evening boys and ghouls. It is time for another Halloween recipe. This time I wanted to create something a little bit cutesy and a little bit spooky. The perfect treat for a Halloween party with little ghouls running around.

The scariest thing about this recipe is how easy and fun it is to create. Prefect to have your own little ghouls help in the kitchen.

As always this recipe is lactose and dairy free providing you use the right ingredients.

  • Line a brownie pan with baking paper or spray liberally with oil.
  • You will need two saucepans. Fill one saucepan a third of the way with water and bring to a simmer. Place the other saucepan on top. Exactly like you would when melting chocolate.
  • Place the margarine and marshmallows into the top saucepan.
  • Bring the water to a simmer. Let the marshmallows and butter melt stirring occasionally.
  • When the marshmallows are completely melted take the saucepan off the heat to the side. Add the salt and vanilla essence and stir thoroughly.
  • Add the rice bubbles to the mixture and stir until coated.
  • Spoon the mixture into the brownie pan. Press down gently to flatten the mixture.
  • Leave the mixture to set at room temperature for a few hours. You can put it in the fridge however you run the risk of the mixture turning into a brick and nobody wants to eat a brick. Leaving it out at room temperature is the safest option.
  • When the mixture is set grab your circle cookie cutter and cut out as many circles as you can. Place onto a tray lined with baking paper.
  • Place a small dot of icing into the center of the rice krispie eyeballs.
  • To decorate we need to create the creepy bloodshot eyes. Simply grab a 15mm sugar eye and a red edible food pen (it must be edible). Draw a red squiggle staring from the black pupil going towards the edge. Continue this the entire way around the eyeball.
  • Place an eyeball on the icing and press down lightly to secure.
  • Serve, devour and enjoy.
