Welcome back to another delicious lactose free recipe. For this recipe I am making really cute rainbow hedgehog cookies.

  • Pre-heat your oven to 160°C (320 F) and line two trays with baking paper.
  • Place all the ingredients for the dough into a large bowl.
  • Mix until a crumbly dough forms.
  • Divide the dough into 20g pieces.
  • Grab a piece of dough. Roll into a ball. Use your fingers to almost pinch one side of ball to make it a triangular shape. The cookies should be a tear drop shape.
  • Move the cookie to the baking tray you prepared earlier.
  • Keep rolling and shaping the dough balls until you have filled up a baking tray.
  • Bake for 15 minutes, until just starting to brown.
  • Move the cookies to a cooling rack. They need to be completely cool before decorating.
  • Melt the white chocolate and move to a small bowl.
  • Place the sprinkles into another small bowl.
  • Grab a cooled cookie and dip it round end first into the white chocolate. You want it to cover just until it starts to tapper off into the nose.
  • Hold the cookie over the dough for a few seconds to allow the excess chocolate to drip off.
  • Place the cookie into the bowl of sprinkles. Cover the cookie in the sprinkles.
  • Transfer the cookie to a clean tray.
  • Keep dipping and coating all of the cookies.
  • Melt the milk chocolate and spoon into a small piping bag.
  • Cut the tip of the piping bag off. It needs to create a very small hole. Chocolate can be tricky to pipe as it flows out quite quickly.
  • Pipe two little eyes and a nice nose onto the tapered end.
  • Decorate all the cookies and place the tray into the fridge for 30 minutes or so until the chocolate sets.
  • Congratulations you have made cute rainbow hedgehog cookies.
