Welcome back to another delicious lactose free recipe. For this weeks recipe I took one of my popular bread recipes and gave it a nice colorful twist.  There is nothing better than fresh warm baked bread smothered in lactose free butter.

 

The bread itself is a sandwich style loaf without any additional seasonings. I wanted the bread to provide a delicious base onto which you can add whatever sweet or savory fillings you want. If you want the bread to be seasoned I suggest the addition of a teaspoon of cinnamon for sweet or a teaspoon of nice garlic powder for savory. You are free to add whatever seasoning you wish though it may affect the color of the dough.

 

The secret to the bright colors is gel food coloring. These dyes are alot stronger than normal dyes and can be found in various baking suppliers or grocery stores.

 

The recipes here have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.

 

Always remember that if you fail it is a learning experience and not the end of the world. Baking is something that takes practice. Failures give you an opportunity to look at what went wrong and why. That knowledge and experience is so important for any baker regardless of skill level. Everyone starts somewhere.

  • Combine the water, yeast and sugar in a small bowl.
  • Set aside for 5 mins or until mixture is foamy.
  • Place the flour and salt in a large bowl. Mix well and make a well in the center. Pour in the yeast mixture and stir until mixture just comes together.
  • Tip the dough out and knead until lovely and smooth.
  • Divide the dough into six. Grab one of the dough balls lightly cover the other balls with a damp tea towel or a loose piece of clingwrap.
  • Stary with the red dye. Apply a few drops to the dough ball. Gently knead until the dye has been fully incorporated and the dough is bright red.
  • Place the red dough into a lightly oiled bowl. Cover with clingwrap.
  • Dye all of the remaining doughballs with the rest of the colors.
  • Set aside the bowls and place in a warm place for 1 hour.
  • Take each of the dough balls out and press down to knock the air out. Start with the red dough. Roll it out into a rectangle like shape. Move it to the side and lightly brush the dough with water. This will help the layers stick together.
  • Get the orange dough out and roll into a rectangle shape the same size as the red. Move the orange dough and place it directly on top of the red. Smooth down. Brush the top of the orange dough with water.
  • Repeat this process with the yellow, green, blue and finally the purple dough.
  • Smooth down the stack of colors to ensure any air bubbles between the layers gets removed.
  • Roll up the dough.
  • Grease a bread loaf tin. Place the dough in the prepared pan. Cover loosely with plastic wrap. Place in a warm, draught-free place for 30 to 45 minutes.
  • Preheat your oven to 190°C.
  • Bake for 30 to 40 minutes until the loaf sounds hollow when tapped.
  • Remove from the tin and leave to cool down. Slice and use to make the rainbow sandwich of your dreams.
  • Congratulations you have made delicious rainbow bread.
