Marinated Feta (Lactose Free)

Welcome back to another lactose free recipe. This week I wanted to share with you another savoury delight that utilizes a delicious lactose free product.  The recipe for marinated feta is so simple to whip up you will never go back to buying marinated feta again. Another great thing is the marinade is easily customizable. You can add in whatever herbs or spices you want to achieve something that is unique to your own taste buds.

 

This marinade uses all olive oil. Good quality olive oil will solidify in the fridge. To serve you will need let the liquid re solidify at room temperature for 30 or so minutes. If you do not want the hassle of doing that you can use one half olive oil one half canola or sunflower oil. I personally do not like this as it changes the taste of the feta. It is up to you what you prefer.

  • Gather your ingredients and prepare a clean work surface to prepare this recipe.
  • Use a sharp knife to pierce the side of the feta packet. Tip to remove the excess liquid.
  • Cut the feta into 16 even cubes.
  • Place the feta cubes into the glass jar.
  • Place the garlic cloves on a chopping board. Use the flat side of the knife to press down onto the garlic cloves to crush them.
  • Place the cloves in the jar.
  • Fill the jar up ¾ of the way with the normal olive oil
  • Now use the garlic oil to fill the jar up the rest of the way so the feta is completely covered.
  • Add in the herbs and a few black peppercorns.
  • Close the lid and shake so everything is lovely combined. Place in the fridge until whenever you want to devour it. It will keep for 2 to 3 weeks.
