  • Place the eggs in a medium saucepan. Fill the saucepan with water so the eggs are covered by at least an inch of water.
  • Bring the water to a rapid boil. When the water comes to a boil turn off the heat and remove the saucepan from the heat. Place a lid covering the saucepan. Leave the eggs to sit in the hot water for 10 minutes.
  • Fill your large bowl with water. Add a few drops of the purple gel food coloring and mix well.
  • Fill another bowl with cold water.
  • Remove the eggs from the hot water using a slotted spoon and dunk into a separate bowl with cold water.
  • When the eggs are cooled to the touch, Crack the eggs all over by tapping them on your work surface. The more cracks the better.
  • Place the cracked eggs into the bowl with the food coloring. Continue until all the eggs are cracked and submerged in the purple water.
  • Cover the bowl with cling wrap and refrigerate for 4 to 8 hours. The longer you keep the eggs in the fridge the brighter the coloring will be. The egg on the left was left for 4 hours and the one on the right was left in for 8 hours. I preferred to keep my eggs in the fridge for at least 8 hours to make sure the purple cracks are really bright.
  • Remove the eggs from the water and carefully remove the skin. This will take a while. Be careful not to remove parts of the white. It helps to peel the shell off in running water. starting from the bottom.
  • Slice the eggs in half and place onto a tray.
  • Carefully scoop out the egg yolks and place into a bowl. Add the mayonnaise and the two types of mustard. Add in a few drops of the green gel food coloring.
  • Mix well until there are no lumps. Season to taste.
  • Place the filling into a large piping bag fitted with the piping tip.
  • Pipe the filling into the parts of the egg were the yolks used to be. Clean any spots of yolk with a little bit of water.
  • Sprinkle with poppy seeds.
  • Serve, devour and enjoy.
