Christmas Madeleines (Lactose Free!)

Welcome back to another delicious lactose free recipe. This week’s recipe marks the start of Christmas season. I wanted this recipe to be quick, easy, and delicious. Something that can be served at any Christmas party or family gathering. Pop the plate on the table and everyone helps themselves.

 

I present these adorable Christmas madeleines. Light little sponge cakes coated in lactose free dark chocolate and smothered in Christmas sprinkles.

 

This recipe comes from the food god himself Gordon Ramsay just tweaked a little and of course changed to utilize lactose free ingredients. He is a huge inspiration to me, and I am an avid collector of his many cookbooks. They are worth every penny, trust me.

  • Preheat your oven to 180°C and grease your tin.
  • Melt your margarine.
  • In a medium bowl add the eggs and sugar.
  • Beat until frothy and pale.
  • Add the vanilla extract and sift the flour into the egg mixture. Mix well.
  • Add the warm margarine and mix.
  • Transfer the batter into a jug.
  • Pour a small amount of the batter into the moulds until it is ¾ filled. The batter will rise as it cooks so you want there to be a little bit of room to rise.
  • Place the tray into the oven to cook for ten minutes.
  • Invert the tin onto a wire rack to remove the madeleines.
  • Repeat this process with the remaining batter. Make sure to spray the tin down before you fill it with the batter.
  • Leave the madeleines to cool down completely.
  • Place a handful of the dark chocolate into a microwave safe bowl. Microwave on low for 20 seconds. Remove the bowl and stir with a metal spoon. If the chocolate hasn’t fully melted, you may need to microwave it further.
  • Gently dip the bottom of the madeleines into the chocolate.
  • Hold it over the bowl so the excess chocolate drips off.
  • Place the madeleine onto a clean baking tray.
  • Sprinkle some of the sprinkles onto the chocolate.
  • Keep doing this decorating process for the rest of the madeleines.
  • If you have any excess chocolate leftover you can spoon it into small moulds and top with sprinkles to make little chocolates.
  • Set aside so the chocolate hardens.
  • Congratulations you have made lactose free Christmas madeleines.
