There is something about a cold rainy day that gives me the urge to make some fresh hot bread. My favorite bread to make is a good damper. It is so quick and easy to make. No waiting hours for the dough to rise. Plus, you can add pretty much anything to it.
When I originally found this recipe (taste.com) I was skeptical. I haven’t always been a huge fond of sweet potato, but this recipe changed my mind. The herbs and the sweet potato go so well together. You can taste it, but the flavors aren’t totally overwhelming. Plus, the addition of the sweet potato creates the most gorgeous orange color.
The recipe you see is entirely lactose free, providing you use the right products of course.

- Preheat the oven to 200c and line a baking tray with baking paper.

- Drain the sweet potato and mash. I prefer my mash to be a little bit chunkier. I enjoy seeing small pieces of potato in the bread alongside the delicious herbs. If you don’t want this effect, then mash it until completely smooth.

- Put some flour onto the bench. Turn the dough onto the surface and kneed until smooth. Shape into a ball and place onto the prepared tray.

- Bake for 30 minutes until golden. Tap the bread, if it sounds hollow then it is done. Also you can stick a skewer into the centre, it should come out cleanly when it is done.
