Crumbly White Chocolate Macadamia Cookies (Lactose Free!)

Welcome back to another lactose free recipe. For this week’s recipe I am making delicious crumbly white chocolate and macadamia cookies.

  • Preheat your oven to 170c (350f). Line a tray with baking paper.
  • Roughly chop the white chocolate and the macadamia nuts.
  • Beat the margarine and brown sugar in a large bowl.
  • In a small bowl beat mix together the vanilla essence, milk and egg.
  • Pour the egg mixture into the bowl with the margarine. Mix well.
  • Sift in the plain flour and self raising flour. Mix well.
  • Add the chocolate and nuts to the dough. Mix until it comes together to form a dough. If it appears to be too crumbly you can always add in a little bit more milk.
  • Scoop spoonful's of dough out. Roll into a ball. Place onto the baking tray and flatten down slightly. I prefer to use an ice cream scoop to get nice big sized cookies.
  • Fill up a tray full of cookies. Make sure to leave a gap in between them as they will rise and spread a little bit.
  • Bake for 8 to 15 minutes until golden brown. The baking time will depend on the size of your cookies.
  • Leave the cookies to cool down for a few minutes and then transfer to a cooling rack.
  • Congratulations you have just made crumbly white chocolate macadamia cookies.
  • Serve, devour and enjoy.
