Hello everyone, in this recipe I will show you how to make adorable funfetti Kirby cupcakes filled with pink glitter slime. Kirby is a video game character that I fell in love with since I was given my first Gameboy very young so he has a special place in my heart.
When I was 4 years old my family went on a vacation to Vanautu. Just as we were about to board the plane my dad gave me a Gameboy that he had just bought. The very first game I had for that Gameboy was Kirby’s Dream Land. That game was the debut of Kirby, an adorable pink ball of sheer cuteness.
I am very lucky that my parents supported video games and encouraged me to play them since I was young. Of course, I still had a healthy balanced life, I wasn’t just playing video games all day every day. Video games really booster my self confidence and provided me with a lot of inspiration that I use every day. I even went to university to complete a degree on game design. Video games are a pretty big part of my life so from now on I will be doing more game themed designs and creations.
I should mention that the slime used in this series comes from the brand Over The Top. It is an edible slime that comes in three beautiful colours. I will be using these to create many creations, not because I am sponsored (I wish) but because the slime looks so amazing.
You will need:
- Cupcakes
- Icing (I use ‘Over The Top Buttercream Icing’ because it is dairy free )
- Piping bag (at least 2)
- round piping tips
- Over The Top Edible Slime (Princess Pink)
- Fondant (White, black, red, light pink, light purple)
- Circle cutter that is the same size of the cupcakes
You can use whichever icing you want. I always use Over The Top because it is dairy free and top quality. Unfortunately, when you make a dairy free icing it can be time consuming and difficult. That is why I always use that icing.
Funfetti Cupcake
The first thing we need to do is to prepare the cupcakes. As always, I am going to use my favourite vanilla cupcake recipe however this time I will be adding a little twist. After we mix the batter we will be adding in some sprinkles. The type of sprinkles you use is important. You need to use Jimmies. The sprinkles that are long cylindrical shaped. Unfortunately if you use 100s & 1000s the colour will instantly run, meaning when you mix it in to the batter the effect will be pretty horrendous. The colours will all mix together looking rather unpleasant.
Ingredients
- 3/4 cup Caster Sugar
- 2 cups self-raising flour
- 2 eggs
- 3/4 cup milk
- 125g butter or margarine (melted)
- 1 teaspoon vanilla essence
- ½ cup Jimmies sprinkles
Steps
Preheat your oven to 180c (356°F). Grease a 12 capacity cupcake pan and line with cases.
In a bowl combine the flour and sugar.
Then add the eggs, butter, milk and vanilla and mix. Keep mixing until the mixture is free from lumps.
Add the sprinkles to the batter.
Mix lightly until the sprinkles are combined.
Spoon the mix into the cases. To achieve more even cupcakes, I like to use a ¼ measuring cup.
Bake the cupcakes for 10 minutes. Test the cupcakes by inserting a skewer into the center. If it comes out clean, then the cupcake has finished cooking.
Let the cupcakes sit in the hot pan for a few minutes then transfer onto a wire rack to cool. The longer the cupcakes are sitting in the hot pan the more they will cook. So it is better not to leave them in for too long.
The cupcakes need to be cooled completely before we can move onto icing them. You can prepare the cupcakes ahead of time and store them in the fridge.
Decorating
Cut the end off the piping bag and insert a piping tip fitted with a round nozzle (any size will do).
Spoon the icing into the bag with the piping tip.
Grab your cupcakes and trim the top so they are completely flat.
Cut a hole in the center with a cupcake corer or spoon.
Get your second piping bag. Cut the end of the piping bag it and fit with a round piping tip. Fill it with slime.
Get your prepared cupcake and pipe some slime into the hole filling it up to the top.
Get your icing and pipe it on the top of the cupcake. Use a knife and smooth the icing down so it is completely flat.
The nest step is to move onto the fondant work. Grab your light pink fondant and kneed until soft. You may notice that your fondant is dry, a great way to combat dry fondant is to use a small amount of baking glycerine. It is clear and colourless that will make it lovely and soft for easier application.
Roll the pink fondant out flat.
This is where you need a circle cutter that matches the same size as the cupcakes. If you don’t have a cookie cutter anything will work, I have used glasses, mugs and Tupperware container lids before. Cut out several circles out of the fondant.
Press these circles onto the cupcakes.
Roll out the red fondant. Cut out medium sized circles. I used the bottom of a wilton 1M piping tip. You will need 2 circles for each cupcake. These will be the feet. To make the flat feet (bottom left deign) simply make a cut across the circle about two thirds up. To make the design on the bottom right simply keep the circles whole.
Place the feet on the bottom of the cupcake.
Roll up the remaining pink fondant and this time cut of medium sized circles. Again I used the bottom of a wilton 1M piping tip. You will need 2 circles for each cupcake.
Place the arms on the cupcake around halfway up.
Now here is the tricky bit. We need to make the eyes. Not only are they a flat cylindrical shape but they also are curved at two ends. I have found two ways to do this. First you can use a cutter that has a similar shape. I used an alphabet cutter that just had the right curve. Alternatively, you can roll the fondant into a cylinder. Press it flat and cut to the right length (2cm by 1cm). Use your fingers to shape the ends into a curve. You will need a black and white version. The white one should be much smaller.
When you have cut or shaped the fondant you can assemble the eyes. Apply a small amount of glue or water to the top center of the black fondant. Press the white section onto the place part. It should be in the center but situated at the top. Leave aside to dry.
Apply a small amount of icing to the area that you want to place the eyes. Gently press the two eyes onto the cupcake.
We are almost finished. Get the light purple fondant. Roll it nice and thin. Cut a tiny circle out of the fondant. You will need two for each cupcake.
Apply a small amount of icing to the area that you want to place it. Not directly under the eyes but slightly to the side. Gently press the fondant down.
Serve and enjoy.
