Pink German Potato Salad (Lactose Free!)
Welcome back to another delicious lactose free recipe. This weeks recipe is something I make every single Christmas for my family. This delicious German potato salad includes a very special secret ingredient that turns the potato salad a very interesting color.
The recipes here have been tested with lactose free ingredients multiple times to ensure their success and deliciousness. As always, this recipe is lactose free providing you use the right ingredients. Always make sure your ingredients are safe.
Always remember that if you fail it is a learning experience and not the end of the world. Baking is something that takes practice. Ingredients

Russet or red potatoes

Hardboiled eggs
(peeled and chopped)

Dill pickles
(diced)

Whole egg mayonnaise
(make sure its lactose free)

Minced garlic

Lemon juice

Can of diced beetroots
(drained)

Capers
(diced)
Instructions

Peel and chop the potatoes into rough cubes.

Place in a large saucepan and fill with cold water. Add some salt and bring to the boil.

Keep boiling until the potatoes are just tender. You will be able to pierce them with a fork. They shouldn't be mushy.

Drain the potatoes and leave to cool down.

Add the mayonnaise, lemon juice and garlic to a large bowl. Mix well.

Add in the pickles, ham, parsley and capers. Mix well.

Drain the beetroot. In the large bowl add in the cooled potatoes, eggs and beetroot. Mix well.

Place in a large serving dish and leave to refrigerate overnight.

Before serving give the potato salad a good stir. The beetroot juices should have colured the potato salad a nice lovely pink.
